What Is HACCP?

HACCP stands for Hazard Analysis and Critical Control Points. It is an internationally recognised, science-based food safety management system that identifies, evaluates, and controls hazards that could pose a risk to food safety. In Ireland, HACCP implementation is a legal requirement for all food businesses under EU Regulation 852/2004 and the Irish Food Safety Authority (FSAI).

HACCP Level 1: Who Is It For?

HACCP Level 1 is designed for food handlers and front-line staff who work directly with food but are not responsible for designing or managing food safety systems. This includes chefs, kitchen assistants, waiting staff, deli counter workers, and anyone involved in food preparation, handling, or serving.

Level 1 covers the basic principles of food hygiene, personal hygiene, temperature control, contamination prevention, and cleaning procedures. It gives workers the foundational knowledge to handle food safely and comply with workplace food safety rules.

HACCP Level 2: Who Is It For?

HACCP Level 2 is aimed at supervisors, managers, and food safety leads who are responsible for implementing, monitoring, and maintaining food safety systems in their workplace. If you manage a kitchen, run a catering operation, or are responsible for food safety compliance in your business, Level 2 is what you need.

Level 2 builds on the fundamentals and adds hazard analysis, critical control point identification, corrective action procedures, record-keeping requirements, and how to develop and audit a HACCP plan.

Is HACCP Training a Legal Requirement in Ireland?

Yes. All food businesses in Ireland are legally required to implement food safety management procedures based on HACCP principles. The FSAI requires that food business operators ensure staff are supervised, instructed, and trained in food hygiene matters appropriate to their work activities. Inspectors from the FSAI and Environmental Health Officers (EHOs) regularly audit food businesses for HACCP compliance.
